What I really like doing with this is whipping up marinades! I also like to come up with neat new spicy things... here's some of my more successful recipe attempts. (Also keep in mind,
'margarine' can be substituted with butter flavored cooking spray... and always hold back on the salt! Not because salt is bad for you, but because most of the other stuff you'll be putting in probably has a certain amount of salt in it already... so a couple of dashes of salt might turn your recipe into an oversalted mess): Gen's chicken/steak marinade (If you want to use it on pork... water it down! Pork soaks up the flavor a lot stronger than beef or chicken and will end up tasting overly salty) The thing I recommend this the most for are Cornish game hens chopped in half. But this will work on anything from chicken wings to breasts to bits of steak. Ingredients: Meat, equiv. to 4-6 chicken breast halves or 2 game hens chopped in half, or 1 whole chicken cut up. 2/3 cup Soy sauce 1/3 cup water 1/2 cup honey 14 cup Brown sugar 1 tsp. pepper 3 tbs. Lemon juice Optional: 1 tsp. Chinese five spice powder
2 tbs. Wine (red preferable) 1 tsp. garlic, minced (Or 1/2 tsp. powdered) Pour the ingredients into a ziplock baggy (or generic equivalent) and shake until they're mixed together somewhat. Chop your meat into the size you intend to serve it and stuff it
in the baggie. Let it sit for at least 2 hours for the flavor to soak in, occasionally flipping over the bag or shaking it up so that the marinade coats it equally. Cook in the oven at 350 degrees, cooking time varies on serving size. While the meat is cooking, baste the remaining sauce in your marinade baggie (you didn't DISCARD it did you?!?! I didn't tell you to do that!) over the food every 10 minutes until you run out of sauce or the food is done.
(Recommended companion dish, steamed rice or Chinese noodles. Ramen will do.) Gen's nummy parmesan chicken breasts! Ingredients: 4 Chicken breast halves
1/2 - 1 cup Parmesan cheese (amount depending on below) 1 tbs. pepper 1/2 tsp. garlic powder 2 tbs. Worstichire sauce 1/2 cup margarine, melted Optional: 1/2 cup bread crumbs (If you only add 1/2 cup cheese) Iceberg Lettuce (Or romaine, depending on your pref) Italian or Caesar salad dressing. Melt margarine and add worstechire, baste chicken pieces thoroughly with mixture. In separate container combine parmesan cheese, pepper, and garlic. To stretch your cheese out (Parmesan cheese is kinda expensive afterall!) you can add bread crumbs in place of 1/2 of the cheese. Coat chicken and cook on
a greased pan at 350 for 20-35 minutes until cheese is golden brown. This can be served on a bed of lettuce with dressing or alone. (Recommended companion dish, salad or fettucinni alfredo) Gen's "kill your frying pan" pan marinated steak Ingredients:
1 non-stick cooking pan and non-stick cooking spray... these are very important 1/2 cup sweet BBQ sauce (I recommend KC masterpiece) 1/2 tsp. black pepper 3 tbs. margarine
Optional: 1 Onion, chopped 3 tbs. Lemon juice 1 can oven cleaner, depending on how "nonstick" your pan REALLY is... This easy. Get pan, get cooking spray, coat pan with cooking spray. Use lots of spray. Get meat, put meat in pan, set pan to medium temp, put onion in pan, put sauce in pan, put the other stuff in pan except oven cleaner... that taste icky. Cook for 10-20 minutes depending on how well done you like meat. Turn off smoke detector. Put meat on plate... clean pan very very quickly before BBQ sauce
becomes impenetrable layer of goo on pan. Put meat in microwave because it got cold while you were cleaning. Turn microwave on. Wait. Take meat out. Eat. (recommended companion dish... anything that no kill more pans. Best you save money on new pan and just eat meat alone...) Gen's olde fashioned fried chicken recipe
(Believe it or not, I haven't used this one in YEARS... I still remember it though!) Ingredients: 1 whole chicken, cut up 2 cups flour 1 cup milk 2 eggs 3 tbs. pepper 2 tsp. salt 3 cups shortening or cooking oil (amount may vary depending on pan size)
Optional spices of your choosing. If it's liquid, add it to the milk, if it's solid, add it to the flour. These items include but are not limited to: Mrs. Dash Cayenne pepper BBQ sauce Paprika Soy sauce (If you add this... I STRONGLY recommend you cut the salt) Garlic More garlic
Onion powder Oregano (used sparingly -- a little goes a LONG way) Mix flour and powdered spices in one container, and combine milk, eggs, and liquid ones in another. Keep your eye on salty ingredients and try and make sure you're not oversalting the
food. Roll chicken in flour, dip in egg/milk mixture after that, and then put it in the flour again until coated. Put the chicken pieces in an oil-filled pan at medium-high temp and cook for 10-15 minutes on each side. It's best to keep an eye on this as it's very easy to overcook or undercook. If it's golden brown when you turn it over you've done good! (Recommended companion dish: corn on the cob, French fries, mashed taters 'n gravy)
Gen's paprika-brandy chicken (Woohoo! Time to break out the booze!!!) Ingredients: 2 Cornish game hens or one whole chicken or approx. amount of bird meat Approx. 2-3 tbs. Paprika 1/3 cup brandy 2/3 cup melted margarine 1 1/2 tbs. garlic, minced or pressed (Or 1/2 powdered) 3 tbs. black pepper 1/4 cup worstechire 1 match (Or lighter) Optional: 1 tbs. brown sugar 2 tsp. salt 1/2 wine Okay, firstly... all the ingredient amounts here are approximate. Feel free to use as little or as much as you want.
I'm just trying to come up with amounts that a first time user might feel comfortable with. Also keep all your fire-safety tips handy, I refuse to take responsibility for your house burning down just because you cooked one of these. Ahem. Anyway, melt the margarine and add the worstechire to it (and the wine if you chose to use it). Pour it over the chicken until everything's nice and coated.
If you're cooking whole game hens or a whole chicken, pour the excess down that bugger's neck so it'll soak in while you cook. Spoon 1 tbs. garlic in there while you're at it. Now, sprinkle pepper (as well as the brown sugar and salt if you chose to use it) over the chicken and dash the paprika on there until the whole chicken is lightly dusted with nice red paprika. I trust you with the pepper, you know how much you like. Cook at 350 for 45-80 minutes, depending
on the serving size (If you're cooking a whole chicken I recommend you get a meat thermometer) and when it's done pop it out of the oven and get your brandy ready. Pour the brandy over the chicken, get your match ready... FOOM!!! I loove flambe! Don't burn your house down. (Realistically, you're not going to get a mushroom cloud, just a very small cool flame what will burn the brandy's flavor into your meat. It's very pleasant) (Recommended companion dish: steamed veggies, steamed rice, light pasta) Gen's Force Bricks (An instant sugar high dessert!) Ingredients: 1 bag puffed marshmallows 5 cups rice crispies cereal 2/3 cup your choice: chocolate, peanut butter, or white chocolate chips (or none) Colored sprinkles 3 tbs. margarine (Yes yes yes I know. Everyone already knows how to make this stuff. Indulge me, okay? I really really like Rice crispie treats!) This is easy. If you have a microwave put all your marshmallows and margarine in a big bowl, pop the bowl in your microwave and nuke it for 4-5 minutes. Stir it all up, add cereal, add chips, and then coat
your hands thoroughly with nonstick cooking spray (butter flavored preferred). Now.. there's the girlie way of doing this which consists of wearing gloves or using a spoon... or there's the macho way which consists of sticking your hands in a big wad of molten marshmallow goo and swirling them around. You wanna be macho, right? Mix mix mix mix mix. Lick excess off your hands. Pour and press into a 3 inch deep pan coated with more cooking spray. Put
sprinkles or colored candy on top. Cut into squares, devour at will. More as I come up with them! Click here to go back! |
